- In a food processor, blend the peeled beans, onion, Scotch bonnet, and ginger until smooth.
- Pour the blended mixture into a bowl. Add salt and Ember All-Purpose seasoning, then mix.
- Using a whisk or hand mixer, beat the mixture for about 5 minutes until light and fluffy to incorporate air.
- Heat oil in a deep fryer or wide pan.
- Using a cookie scoop or tablespoon, scoop the mixture into the hot oil.
- Fry until golden brown on both sides.
- Serve hot with custard, oats, or your favorite side dish.
Notes
For extra crispiness, make sure the oil is hot before frying. Whipping in air helps the akara puff up and cook evenly.
