Basic Akara Recipe

Ingredients
  

  • 2 1/2 cups peeled black-eyed peas (or peeled honey beans)
  • 1 large onion
  • 2 Scotch bonnet peppers adjust to taste
  • 1/2 finger of fresh ginger adjust to taste
  • 1 tbsp EmberSpices All-Purpose Blend
  • Salt to taste
  • Oil for frying

Equipment

  • 1 Food Processor (for blending the beans and spices)
  • 1 Deep fryer or large frying pan (for frying)
  • 1 Slotted Spoon (to remove fried akara from oil)
  • 1 Whisk or Hand mixer
  • 1 Paper Towel-lined tray or plate
  • 1 Mixing Bowl (to combine ingredients)
  • 1 Cookie scoop or tablespoon( for portioning)

Method
 

  1. In a food processor, blend the peeled beans, onion, Scotch bonnet, and ginger until smooth.
  2. Pour the blended mixture into a bowl. Add salt and Ember All-Purpose seasoning, then mix.
  3. Using a whisk or hand mixer, beat the mixture for about 5 minutes until light and fluffy to incorporate air.
  4. Heat oil in a deep fryer or wide pan.
  5. Using a cookie scoop or tablespoon, scoop the mixture into the hot oil.
  6. Fry until golden brown on both sides.
  7. Serve hot with custard, oats, or your favorite side dish.

Notes

For extra crispiness, make sure the oil is hot before frying. Whipping in air helps the akara puff up and cook evenly.
